There is a nice mix of sweet and savoury - beverages, breads, sweets, biscuits, desserts, main and side dishes as well as party foods and snacks.
There are no pictures in the e-book, but the layout is clear concise. Ingredient's and then numbered points for the cooking method. The recipes look fairly straight forward and easy to put together.
Immediate favourites are Lemon Tuna Salad, Lemon Shrimp (served with parmesan rice), Lemon pork chops and always a favourite of mine, Lemon chicken. I usually make Lemon chicken using a whole chicken cooked in the oven, but here is a different version:
Lemon Chicken - Slow cooked in a crockpot
3 and a half pounds of chicken pieces
1 teaspoon crumbled dry leaf oregano
2 cloves garlic minced
2 tablespoons butter
1/4 cup of chicken broth or water
3 tablespoons lemon juice
salt and pepper
2 cups cooked instant rice
- Wash chicken, pat dry and season to taste with salt and pepper
- Sprinkle half of garlic and oregano over the chicken
- In a frying pan, brown chicken on all sides in butter
- Move chicken to crockpot
- Sprinkle with remaining garlic and oregano
- Add broth or water to frying pan and stir to loosen the brown bits
- Pour the broth into the slow cooker
- Cover and cook on LOW for 7-8 hours
- Add lemon juice an hour before serving
- Skim fat from juices and pour into a serving bowl
- Thicken juices and add to the cooked rice
- Serve chicken with rice
